Flavour

The apple here is the sweet red kind rather than a sour green one: soft, ripe and a little sugary, closer to apple juice than a fresh-cut wedge. The ice runs over the top of it and does most of the work on the exhale, dropping the temperature and sharpening the fruit as it goes. Cooling is moderate rather than glacial.
